300-Calorie Lunch: Turkey & Spinach Wrap

Today, for Andy's 300-calorie lunch, I packed turkey & spinach wraps.


I spread a flour tortilla (140 calories) with 1 wedge Laughing Cow cheese (50 calories), topped that with fresh baby spinach and some very thinly sliced yellow onion (10 calories); then I staggered 3 slices of Oscar Mayer turkey breast on one end (60 calories total), rolled up tightly, and cut in two. Sides were green pepper strips (15) and more strawberries (25), bringing the estimated total right to 300.

Now, I need to remember to buy several flavors of Light Laughing Cow cheese, at 35 calories per wedge. That stuff is really good, and it makes a perfect sandwich spread!

  2. That looks really good. I'd have to swap out the green peppers for celery though. Peppers and I have a bad relationship. Maybe throw in a couple of those little snack pickles instead.
    I love La Vache Qui Rit (Laughing Cow) cheese. Better than those little wax wrapped cheeses. We'd also use flavored light cream cheese, store brand.
    One Christmas for a Church smorgasbord I used red and green tortillas and spread cream cheese with chopped chile's on it. All rolled up and cut into serving sized portions. Went over really well.

  3. I made one for myself for lunch, and it really was good!

    Andy's favorite veggie is a bell pepper - any color. Actually, I think red may be his favorite. He's the one who went grocery shopping and bought a buttload of bell peppers a few days ago, so I have to use them before they go bad. I asked if he was tired of getting them in his lunches every day, and he said, "No way."

    Amulbunny - tortillas spread with cream cheese and chopped chiles sounds scrumptious!!! I'll have to try that some time.
